This is my own paella recipe. Paella is a one-pot spanish rice-style meal. Traditional paella typically involves several meats, including chorizo and most often, shrimp. But I like mine plain and simple (and without seafood). I also like to serve it with fresh cornbread.
Paella
1 whole chicken, cooked and pieced
1 C. rice
1 med. onion, chopped
2 cloves garlic
1 T. lime juice
1/8 t. cumin
1 t. chili powder
1 t. your favorite kind of peppers, if you want to make it spicy
salt and pepper to taste
1 1/2 C. chicken broth
1 large can diced tomatoes (or 3-4 med tomatoes if you prefer fresh)
Cook up the chicken, reserving the chicken broth. Break up the chicken in bite-size pieces.
Put in a large skillet about 1 T. oil and saute rice, onion, garlic, and lime juice. Stir fry until the rice is almost translucent. Add the spices, chicken broth, and tomatoes, including the juice, if using canned. Mix well. Heat to boiling, then reduce heat to low simmer and cover. Let cook about 20 minutes, or until most of the liquid is absorbed. Add chicken and heat through.
